Description
Moist, high-protein cottage cheese banana bread made sugar-free with ripe bananas and almond flour. Perfect for breakfast or snack.
Ingredients
3 ripe bananas (heavily spotted)
2 eggs
1/2 cup full-fat cottage cheese
2–3 tbsp maple syrup (adjust to taste)
1 tsp vanilla extract
2 1/4 cups almond flour
1 tsp baking soda
1 tsp cinnamon
Optional: 1/3 cup chopped walnuts, blueberries, or sugar-free chocolate chips
Instructions
1. Preheat oven to 350°F. Line and grease a loaf pan.
2. In a large bowl, mash bananas. Add eggs, cottage cheese, maple syrup, and vanilla. Mix well.
3. Add almond flour, baking soda, and cinnamon. Stir gently to combine.
4. Fold in optional mix-ins if using.
5. Pour batter into pan. Bake for 50 minutes, covering loosely after 30 minutes if browning.
6. Test doneness with toothpick. Let cool in pan 10 minutes, then on wire rack.
7. Slice and enjoy.
Notes
Use very ripe bananas for best sweetness and moisture.
Store in an airtight container 3 days, fridge 5 days, or freeze sliced for 2 months.
