Description
A simple no sugar no flour strawberry cake recipe made with almond flour, monk fruit, and fresh strawberries. Naturally sweet, moist, and gluten free.
Ingredients
2 cups almond flour
½ cup monk fruit sweetener
3 large eggs
¼ cup unsweetened almond milk
¼ cup melted coconut oil
1 tsp vanilla extract
1 tsp baking powder
1½ cups fresh strawberries, diced
Instructions
1. Preheat oven to 350°F and grease or line a round cake pan.
2. Whisk together almond flour, sweetener, and baking powder.
3. In a separate bowl, beat eggs, milk, oil, and vanilla.
4. Add wet ingredients to dry and stir until combined.
5. Gently fold in the diced strawberries.
6. Pour into prepared pan and smooth the top.
7. Bake 30–35 minutes or until golden and firm.
Notes
Use very ripe strawberries for best natural sweetness.
Cool completely before slicing for clean edges.
Store refrigerated up to 5 days or freeze individual slices.
