Description

This Labubu Ice Cream Cake is a fun, sugar-free dessert perfect for kids’ birthdays. Made with almond flour crust and creamy no-sugar ice cream, it’s a show-stopping treat—no oven needed!


Ingredients

Scale

1 ½ cups almond flour

¼ cup melted butter

2 tbsp allulose or monk fruit

2 pints sugar-free vanilla ice cream

2 pints sugar-free strawberry or chocolate ice cream

1 ½ cups heavy whipping cream

3 tbsp powdered erythritol

Food coloring (optional)

Labubu cake topper or fondant

Sugar-free chocolate chips (optional)


Instructions

1. Mix almond flour, melted butter, and sweetener to form crust.

2. Press crust into lined cake pan or mold and freeze 30 minutes.

3. Scoop first ice cream layer and freeze 1 hour.

4. Add second layer and freeze 2 hours more.

5. Whip cream with sweetener; color if desired.

6. Frost frozen cake with whipped cream and decorate.

7. Add Labubu face details and cake topper.

8. Freeze 20–30 more minutes before serving.

Notes

Decorate just before serving to keep design fresh.

Store covered in freezer for up to 5 days.
