A playful sugar-free Labubu cake made with almond flour, natural sweeteners, and whimsical design. Perfect for birthdays, bento boxes, and gifting!
Ingredients
2 cups almond flour
1/4 cup coconut flour
2 tsp baking powder
1/4 tsp sea salt
4 large eggs
1/2 cup unsweetened almond milk
1/3 cup melted coconut oil
1/2 cup monk fruit sweetener
1 tbsp vanilla extract
1 cup unsalted or coconut butter (room temp)
1/4 cup powdered monk fruit sweetener
1 tsp vanilla extract
Natural food coloring (charcoal, beet, turmeric)
Sugar-free marzipan or fondant for decoration
Instructions
1. Preheat oven to 350°F (175°C), grease and line 2 6-inch pans.
2. Whisk together almond flour, coconut flour, baking powder, and salt.
3. In another bowl, mix eggs, almond milk, oil, sweetener, and vanilla.
4. Combine wet and dry ingredients until smooth.
5. Divide into pans and bake for 25–28 minutes until golden.
6. Let cool completely before decorating.
7. Beat frosting ingredients until fluffy; separate and tint as needed.
8. Assemble and frost the cake with character details.
9. Add fondant Labubu features or use cake toppers.
10. Chill before serving if using as ice cream cake variant.
Notes
For a bento version, divide batter into four 4-inch tins.
Use beetroot powder or turmeric for natural colors.
To create a frozen version, freeze layers and use whipped coconut cream between.
