Description

This creamy, sugar-free cottage cheese queso is packed with protein and bold flavor, using nutritional yeast and wholesome spices.


Ingredients

1 cup full-fat cottage cheese

1/4 cup unsweetened almond milk

2 tablespoons nutritional yeast

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cumin

1/4 teaspoon chili powder

1/4 teaspoon salt

1/4 cup canned diced green chilies

1 tablespoon lime juice

Optional: 1 tablespoon chopped pickled jalapeños


Instructions

1. In a blender, combine cottage cheese, almond milk, nutritional yeast, and all spices. Blend until completely smooth.

2. Transfer to a saucepan over medium heat. Stir continuously.

3. Add diced green chilies and lime juice. Simmer 3–5 minutes to thicken.

4. Optional: stir in pickled jalapeños for extra heat.

5. Serve warm with chips, veggies, or as a sauce.

Notes

To make a cream cheese-style spread, strain the blended mixture overnight.

Add more almond milk for a thinner sauce if needed when reheating.

Store in the fridge for up to 3 days.
