Ingredients
1 cup cottage cheese (any type)
2 large eggs
3/4 tsp garlic powder (optional)
1 tsp Italian seasoning (optional)
Parchment paper
Instructions
1. Preheat oven to 350°F (176°C) and line a baking sheet with parchment paper.
2. Blend cottage cheese and eggs until smooth. Stir in seasonings if using.
3. Pour mixture onto parchment and spread into a thin, even layer.
4. Bake for 30–35 minutes, or until edges are golden and center is firm.
5. Cool completely before cutting or topping.
6. Store in fridge up to 5 days or freeze with parchment between slices.
Notes
Use fat-free, reduced-fat, or full-fat cottage cheese depending on your dietary needs.
Flatbread will crisp more if spread thin.
