- ½ cup full-fat cottage cheese (blended smooth)
- 2 large eggs
- ½ cup almond flour
- ⅓ cup unsweetened cocoa powder
- ¼ cup monk fruit or erythritol sweetener
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- Optional: 1 scoop chocolate protein powder
- Optional: 2 tbsp melted coconut oil or almond butter
- Optional: ¼ cup sugar-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan.
- Blend cottage cheese until smooth.
- Whisk together eggs, vanilla, and cottage cheese.
- Add dry ingredients: almond flour, cocoa powder, sweetener, baking powder, salt.
- Stir to form a thick batter; fold in optional ingredients.
- Spread into pan and bake 20–25 minutes.
- Cool fully before slicing into squares.
Notes
- Store in fridge up to 7 days or freeze for 1 month.
- Add nuts or swirl almond butter for variety.
