Description

Fudgy, high-protein brownies made with cottage cheese for a rich, sugar-free treat you’ll crave again and again.


Ingredients

Scale
  • ½ cup full-fat cottage cheese (blended smooth)
  • 2 large eggs
  • ½ cup almond flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ cup monk fruit or erythritol sweetener
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp baking powder
  • Optional: 1 scoop chocolate protein powder
  • Optional: 2 tbsp melted coconut oil or almond butter
  • Optional: ¼ cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan.
  2. Blend cottage cheese until smooth.
  3. Whisk together eggs, vanilla, and cottage cheese.
  4. Add dry ingredients: almond flour, cocoa powder, sweetener, baking powder, salt.
  5. Stir to form a thick batter; fold in optional ingredients.
  6. Spread into pan and bake 20–25 minutes.
  7. Cool fully before slicing into squares.

Notes

  • Store in fridge up to 7 days or freeze for 1 month.
  • Add nuts or swirl almond butter for variety.
