Description
A naturally sweet, sugar-free banana bread made with cottage cheese and no flour. Soft, moist, and protein-packed.
Ingredients
1 cup full-fat cottage cheese
2 large ripe bananas (mashed)
2 eggs
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking soda
3/4 cup almond flour
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. In a blender or food processor, blend cottage cheese, bananas, eggs, vanilla, and cinnamon until smooth.
3. In a bowl, mix almond flour, baking soda, and salt.
4. Combine wet and dry ingredients. Mix well.
5. Pour batter into prepared loaf pan and smooth the top.
6. Bake for 40–45 minutes, or until a toothpick comes out clean.
7. Let cool in pan for 10 minutes, then remove and cool completely on a rack.
Notes
Use overripe bananas for best sweetness. You can add chopped walnuts or sugar-free chocolate chips. Store leftovers in the fridge or freeze in slices.
