Description
A moist, high-protein banana bread made with almond flour and cottage cheese. Naturally sweet, sugar-free, and gluten-free.
Ingredients
3 ripe bananas, mashed
¾ cup full-fat cottage cheese
2 large eggs
1 teaspoon vanilla extract
1½ cups almond flour
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
Optional: 1–2 tbsp monk fruit sweetener
Optional: ¼ cup chopped walnuts or sugar-free chocolate chips
Instructions
1. Preheat oven to 350°F and line an 8×4-inch loaf pan.
2. Mash bananas in a bowl. Blend in cottage cheese, eggs, and vanilla.
3. In another bowl, mix almond flour, baking soda, cinnamon, salt, and sweetener.
4. Combine wet and dry ingredients until just mixed.
5. Fold in optional walnuts or chocolate chips.
6. Let batter sit for 5–10 minutes.
7. Pour into loaf pan and smooth the top.
8. Bake for 45–55 minutes. Tent with foil if browning too fast.
9. Cool 10 minutes in pan, then move to rack.
Notes
Use super ripe bananas for natural sweetness.
Blending cottage cheese makes texture smoother.
Freezes well—wrap slices individually.
