These no-bake cookie dough protein bars are soft, rich, and sweetened without sugar—packed with clean ingredients and chocolatey bliss.
Ingredients
1 cup oat flour
½ cup vanilla plant-based protein powder
¼ tsp salt
¼ tsp baking soda
½ cup cashew butter
3 tbsp maple syrup (or sugar-free syrup)
2 tbsp almond milk
1 tsp vanilla extract
⅓ cup mini dark chocolate chips
Chocolate Coating:
½ cup dark chocolate chips
1 tsp coconut oil
Instructions
1. Whisk oat flour, protein powder, salt, and baking soda in a bowl.
2. Add cashew butter, syrup, milk, and vanilla. Mix until dough forms.
3. Fold in mini chocolate chips.
4. Press into lined 8×4 pan and smooth top.
5. Melt chocolate chips and coconut oil. Pour over base.
6. Freeze 1 hour until firm.
7. Slice into 8 bars. Store chilled or frozen.
Notes
Use sunflower seed butter for nut-free version. Store in fridge for 1 week or freeze for 3 months.
