Description

Naturally sweet chocolate chip banana oatmeal bars made with ripe bananas, oats, and sugar-free chocolate chips. Soft, moist, and freezer-friendly!


Ingredients

Scale

4 ripe bananas (3 mashed, 1 chopped)

2 large eggs

½ cup neutral oil

2 tsp vanilla extract

1 tsp baking soda

¾ tsp kosher salt

2½ cups old-fashioned oats

1½ cups whole wheat or spelt flour

¾ cup sugar-free chocolate chips (plus ¼ cup for topping)

Cooking spray


Instructions

1. Preheat oven to 350°F and line a 13×9-inch pan with parchment.

2. Mash 3 bananas in a bowl; chop the 4th banana into small pieces.

3. In another bowl, whisk eggs, oil, vanilla, baking soda, and salt.

4. Stir in mashed bananas, then fold in oats and flour.

5. Add chocolate chips and chopped banana. Stir gently.

6. Pour batter into the pan and smooth the top.

7. Sprinkle remaining chips over the top.

8. Bake for 23–27 minutes until firm and golden.

9. Cool completely before slicing into bars.

Notes

Use extra-ripe bananas for the best sweetness and texture.

Store bars in the fridge for up to 1 week or freeze individually.

To make vegan: use flax eggs and dairy-free chocolate.
