Description
Soft, gooey banana bread cinnamon rolls made entirely sugar-free with ripe bananas, monk fruit sweetener, and warm cinnamon flavor.
Ingredients
2 ¾ cups all-purpose flour
2/3 cup mashed ripe bananas
¼ cup granulated monk fruit
1 packet (2¼ tsp) rapid rise yeast
¼ tsp salt
½ tsp ground cinnamon
1 large egg
¼ cup unsalted butter, melted
½ cup warm milk
1 tsp vanilla extract

½ cup golden monk fruit sweetener
1½ tbsp ground cinnamon

4 oz cream cheese, softened
¼ cup powdered monk fruit
1 tsp vanilla extract
½ tsp cinnamon
1–2 tbsp milk (optional)
Instructions
1. Combine warm milk and monk fruit. Add yeast and let foam.
2. In a bowl, mix mashed banana, egg, butter, vanilla, and cinnamon. Add yeast mixture.
3. Mix in flour and salt. Knead dough until smooth.
4. Cover and let rise 1 hour.
5. Mix filling ingredients until smooth.
6. Roll dough to 12×16″, spread filling, and roll up.
7. Cut into 9–12 pieces. Let rise 30 minutes.
8. Bake at 350°F for 22–25 minutes.
9. Mix frosting ingredients until smooth.
10. Frost rolls while warm and enjoy!
Notes
Store rolls in an airtight container for up to 3 days. Reheat in microwave 15–20 seconds for best texture. Make ahead by refrigerating overnight before baking.
